These cookies are adapted from my favorite cookbook ~ The Limited Edition of Better Homes and Gardens ~ its got just about everything in there. I like to make these when I can’t decide what kind of cookie to make. Now if I’d just roll them in cinnamon sugar they really would have everything … but that might be going a little too far! I can’t ever seem to remember what page they’re on, or what the book calls them but it opens right up to that page! And its really stained — a true sign of a tried and tested recipe.
Ingredients
3/4 cup butter (softened)
1/2 cup peanut butter
1 cup sugar
1/2 cup brown sugar
1 tsp baking powder
1/2 tsp baking soda
2 eggs
1 tsp vanilla
1 & 1/4 cups flour (all purpose)
2 cups rolled oats
1 cup chocolate chips ( or add any of the following: chopped nuts, raisins, dried cranberries, butterscotch or vanilla chips, etc… see?! very versatile)
Directions
Mix ingredients in a large bowl. Combine them in the order they are listed, gradually with a mixer. Oats and choc chips should be folded in with a big wooden spoon.
Drop spoonfuls of dough on a cookie sheet.
Bake at 375 degrees F for approx 10 minutes. Cookies should be golden on the edges and appear somewhat gooey in the middles.
Let them rest on the cookie sheet for a couple minutes. They sort of “finish” cooking and they are much easier to pick up and move to the cooling rack.
Makes about 5 dozen cookies.
