Guacamole

This guacamole is my favorite. It tastes so fresh and its so basic.

Scoop it up with tortilla chips or add it to 7-layer dip. Its good in tacos or on a burger.

The only rule is to enjoy! The amounts of ingredients are approximate and adjustable to your tastes.

Ingredients

2 soft avacados

1 med — large lime

2 roma tomatoes: diced

1/2 medium onion (yellow, white, green, red … whatever): diced

+/- 1/2 cup fresh cilantro: chopped

1/4 – 1/2 anahiem/jalepeno pepper (optional): diced

Directions

Smash the avacado up in a small bowl. Squeeze half of the lime juice over the avacado. Sprinkle with salt (optional & to taste).

In a separate bowl, combine tomatoes, onions, cilantro (and peppers). Squeeze the other half of the lime over this. You now have pico de gallo, by the way.

Dump the pico de gallo into the smashed avacado. Fold it all together.

Best served cold.

To store well without turning brown right away, press plastic wrap tightly against the guacamole. The less air that touches it the longer it will stay green!
