Pork & Pineapple Tacos
(aka, Tacos al Pastor) I’ve recreated this dish by memory of an entrée my sister in law served at her restaurant about 4 years ago and then tweaked for my family’s tastes. Cooking pineapple really brings out the sugars and it gets so sweet. Pork has such a saltiness to it already, it pairs perfectly with the sweet tangy pineapple. Then a guaca-de-gallo is added for a creamy tang! Let me know what you think of the recipe in the comments!
Ingredients
1 lb pork chops, cut into bite size pieces, approx 1/2 inch cubes
1/4 onion, diced
1/2 cup pineapple tidbits
1/4 cup veg oil
1 clove garlic, minced
1 tsp ea: chili powder, cumin, dried parsley

1 avocado, diced
1/2 onion, diced
1/2 – 1 cup chopped cilantro (to your taste)
juice from 1/2 lime

10 soft corn shells, heated to be soft and pliable

Directions
Put veg oil in skillet over medium heat
Add onion & garlic, saute til tender and translucent, push to edges of pan
Add pork chop pieces, sprinkle over seasoning
Stir til pork is golden all over and done
Add pineapple plus a little juice (it helps deglaze the pan)
Meanwhile, stir together avocado, onion, cilantro and lime juice in separate bowl for the guaca-de-gallo
Serve corn shell with rounded spoonful of pork-pineapple mixture topped with the guaca-de-gallo
