Spanish Rice
Ingredients
1/4 cup olive oil
1 1/2 cups long grain rice
1 can Cilantro Lime Rotel tomatoes
water
1 tsp Cumin
1/2 tsp Chili Powder
1 tsp salt

Directions
In a skillet warm up the oil. Add Rice and stir frequently til it starts to brown.
Add spices.
In a measuring bowl pour in the Rotel and add enough water to make 3 cups. (approx refill the can of Rotel one and a quarter times)
Add liquid to skillet and bring to a boil.
Turn down the heat to low, cover and leave alone for 20 minutes.
DO NOT REMOVE LID UNTIL TIME IS DONE!
Ding!
Take off the lid and ‘fluff’ the rice.
