Up above is a photo of the taco salad we had for dinner. I tried to do that put-the-tortilla-in-the-backside-of-a-muffin-tin thing. But my tortillas were way too big. So I used ramekins in a cake pan and I could do three tortillas at a time. I put the ramekins upside down and placed them sort of in a V-shape. Then I could put the tortilla between them and they stood up on their own. Bake at 350° for about 10 minutes or until the edges get golden and they are slightly crunchy.
For the burger – I used one pound of ground beef. I season with:
1 TBSP chili powder
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder (or dice up about 1/3 cup of onion and saute it with the burger)
1 tsp salt
1 tsp pepper
All of that is a give or take – I sprinkle it out in my hand and throw it in the pan. Once its brown all over drain the extra grease and keep the burger warm until ready to use. …Unless you like cold taco salad. Then you should cool the burger. Its whatev, taco salad is good however!
Then just shred some lettuce and cheddar, dice some tomatoes (olives, jalapenos, green onion, whatever…).
Layer the lettuce, burger, cheese, sour cream, tomatoes, salsa…
EAT!!
