Sunny Oat’n Raisin Cookies


1 Cup (2 sticks) butter, softened

1 Cup packed brown sugar

1/2 Cup granulated sugar

2 eggs

1 tsp vanilla

1 & 1/2 Cups flour

1 tsp baking soda

1 tsp cinnamon

1/2 tsp salt (optional)

3 Cups Oats (quick or old fashioned)

1/4 Cup sunflower seeds

1/2 Cup raisins


Heat oven to 350*

Beat together butter and sugars until creamy

Add eggs and vanilla; mix well

In a separate bowl combine flour, baking soda, cinnamon and salt; mix well, then add to “wet” mixture

Stir in oats, sunflower seeds, and raisins

Drop by rounded [cereal] spoon size blobs onto UNgreased cookie sheet

Bake 10 – 12 minutes — the cookies will look slightly golden on the edges and too gooey in the middle, but take them out, allow to set on the cookie sheet for about 2 minutes then move to a cooling rack

Makes approx 4 dozen cookies
