Your menu plan is brilliant — and very tasty sounding! I adore chicken satay/Indonesian peanut sauce, and make it frequently(!) at work. You might want to try using coconut milk as the base (about 1 cup c. milk: 3/4 natural peanut butter). It adds an excellent flavour dimension. And I prefer to add 1tsp or so (depending on your preference for heat) of red curry paste or sambal.
Thank you for the tips! I can’t wait to try it out, I think (hope!) it will be a hit with the kids too 🙂 They already like apricot chicken and curry chicken, so maybe this will be an easy win. Its fun trying out new genres of food!
